Scrambled Eggs with Chives and Sour Cream

Ingredients (Makes 2 Servings)
  • 2 large eggs
  • 2 egg whites
  • salt to taste
  • freshly ground black pepper
  • 1 teaspoon olive oil
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon non-fat sour cream
Directions
  1. Whisk the eggs, egg white, salt and pepper together in a mixing bowl until well blended.

  2. Heat the oil in a 6" or 8" nonstick frying pan over medium heat.

  3. Pour the egg mixture into the frying pan and stir constantly over low heat with a rubber spatula. When the eggs begin to get firm, add the chives and sour cream and continue stirring.

  4. When the eggs have reached the desired degree of doneness, put them on warm plates and serve immediately.
